Last week I was watching Food Network while my daughter was taking a nap. I love watching the Food Network or going onto their website. Not only can you get some awesome recipes, but you can also get helpful cooking tips and hints that can make your life so much easier!
Down Home with the Neelys is a show that is on the Food Network featuring Pat and Gina Neely and their down home southern cooking. Being a southern girl I love watching this show and getting different ideas for various meals. While I was watching this show last week they made a dish that was a little different from their norm. The show was titled "Easy Breezy" and the food they made just looked so awesome! The dishes that they made on this episode were: Shrimp & Melon Salad, Couscous & Zucchini, Marinated Pork Chop with Pineapple Salsa, and Frozen Ginger Lemon Drops. After watching this entire episode my mouth was just watering so I decided to print out the recipes right then and there and make my grocery list.
Tonight I was finally able to make this awesome dinner courtesy of the Neelys. I didn't make the Shrimp & Melon Salad only because I wanted to try these recipes out on my husband and daughter first, before I decided to use them for entertaining. Let me just tell you one thing about these recipes.....YUMMY!! The pork chops were so moist and with the pineapple salsa it was just so delicious. The pineapple salsa calls for jalapeno peppers, but I chose instead to use habaneros since I prefer the flavor of the habanero. As such, the mildness of the couscous goes great with the spice of the pineapple salsa. This whole meal just has a tropical feel to it that the cocktail that accompanies this meal is just perfect. I didn't have regular vodka on hand, but we did have a bottle of mango flavored vodka that someone had given to my husband as a gift, so I used that instead. The drink was so freaking good I just can't tell you! It was nice and refreshing and just went perfect with everything.
My husband had a busy day at work and was a little wore out when he got home. After this awesome dinner his bad day turned into an awesome evening courtesy of these awesome recipes from the Neelys. If you're looking for something new for dinner, you must try out these recipes!!

I love their show too!! I make pineapple salsa all the time, not sure if it's the same recipe.
